Vodka Sauce with Chicken & Spinach
3-Boneless Chicken Breast, Julienne into 1/2 inch Slices
1 -Head of Fresh Spinach
1- Jar Billy’s Vodka Sauce
1-lb of Pasta or 1 cup of Rice
Bring sauce to a simmer, stirring occasionally, add chicken let simmer for 15 minutes, add spinach cook until tender. Remove skillet from heat.
While chicken mixture is cooking, boil the pasta or rice.
When finished combine chicken mixture with rice or pasta.
2 Ibs Ground beef ( or 1 Ib beef and 1 Ib veal) cook until medium rare. Drain excess fat from pan
Add Billy's Italian Market Marinara Sauce and 1/2 cup red wine (Cabernet) and let simmer.
1/2 celery stalk chopped
1/2 onion diced
1/2 carrot chopped
In a separate pan saute the celery , onion and carrot in olive oil, salt and pepper. Until soft
Add this mixture to the meat sauce with wine, and pinch of oregano. Simmer for 45 Minutes
Meanwhile, cook the pasta In a large pot of boiling salted water untlt al dente, tender but still firm to the bite, about 8 minutes. Drain.
Toss the pasta with the mixtures in a large bowl to combine.
